Healthy Chocolate Chip Cookie with Almond Butter Filling

Almond Butter Chocolate Chip Cookies

No white sugar, or white processed?flour,?made with cacao chips, contains oats. Vegan and gluten free. These are the best chocolate chip cookies I’ve ever tasted and they are made with quality ingredients, easy to make and the?almond butter filling melts in your mouth.

Ingredients

1/2 cup coconut oil, less 2 tbsp. softened.Melt on low hear.
1/4 cup coconut sugar.?plus 2 level tbsp. ( low sugar can ad up to 1/2 cup)
2 tbsp maple syrup.
1 tsp vanilla.
1 serving chia paste* (or 1 egg).
1/2 cup brown rice flour.

1/4 buckwheat flour (or spelt if gluten isn?t a problem).
1 cup gluten-free oats.
1 tbsp arrowroot starch.
1/4 tsp baking soda.

1/2 cup dark,cacao,nibs chocolate chips. (best to combine)
1/4 cup almond butter store bought or make your own.
If mixture is too loose add abit more oats, or if too dry ad a little
water.
*Chia Paste- 1tbsp chia seeds, ground, mixed with 1/4 cup warm water.. .

Method

1. Preheat oven to 350

2. Mix together coconut oil, sugar maple syrup, vanilla and chia paste. .

3. In a separate bowl, mix flour, oats baking soda and salt. Stir in chocolate chips .

4. Using 1-2 tbsp of mixture, form into 1/2 ball, top with alittle almond butter, top with other 1/2 mixture and flatten slightly and place in parchment lined cookie sheet. .

Bake for about 15 minutes, until golden.

Makes about 15 cookies.
