Ingredients
4 cups of vegetable or chicken stock
6 beet root
2 carrots
2 celery sticks
1 onion
4 garlic cloves chopped up
pepper and parsley or dill to taste
Method
Make you stock and add all ingredients chopped up.
Cook until all vegetables are soft.
In a blender start adding cups of the soup into blend until all the vegetables are pureed and the soup is smooth.
You can top off your bowl of soup with a little yogurt and just a dash of milk of your choice to drizzle onto the soup.
Add a few pumpkin seeds if you like.
